Today I was abruptly woken up during a deep sleep nap by my youngest to make some crack caramel popcorn. I say “crack” caramel popcorn because…*warning*… this stuff is addictive. You can use this simple recipe as a base and add nuts, chocolate chips, raisins, cranberries, granola…anything you want!
Here is the easy recipe (Note: You can double the caramel sauce as you want!)
Ingredients:
1/2 stick of butter
1/2 cup packed brown sugar
1/4 tsp salt
1 tablespoon of agave or corn syrup
1/4 tsp baking soda
1 bag of microwave popcorn
Set oven to 200 degrees. Pop the bag of popcorn as usual. Place in a layer on top of wax paper on a cookie sheet. In a saucepan, melt the butter, agave, brown sugar, and salt on medium heat. Cook for about 5 minutes until melted through and bubbly. Take the caramel mixture off of the heat and add the baking soda. The baking soda will immediately make the caramel mixture expand in volume. Pour the mixture over the popcorn. Mix everything thoroughly. Place in oven and bake for 30 minutes, remixing everything in 15 minute intervals. Once out, it will harden pretty fast, so it helps to mix it, place in a bowl and/or serve it immediately.
